Lemon-Honey Ricotta in Puff Pastry


Recipe: Wildtree Lemon-Honey Ricotta in Puff Pastry

  • 1 package of frozen puff pastry shells (6 shells) 1
  • ½ cups part-skim ricotta
  • 2 tablespoons Lemon Lime Cheesecake Blend, #10579
  • 2 tablespoons honey
  • 2 teaspoons orange zest
  • 18 orange segments
  • Fresh mint sprigs


  1. Bake puff pastry shells according to package instructions
  2. Meanwhile, in a medium sized bowl mix together ricotta, Lemon Lime Cheesecake Blend, honey, and orange zest
  3. Once puff pastry shells have cooled, remove the “top” and soft pastry underneath
  4. Stuff the shells with the ricotta mixture; evenly dividing it among the six shells
  5. Top each ricotta stuffed shell with 3 orange segments and a fresh mint sprig
  6. Drizzle with additional honey, if desired.

Recipe: Wildtree Tiramisu


  • 8 ounces Mascarpone Cheese
  • 4 tablespoons, divided
  • Wildtree Mocha Mousse & Cheesecake Blend, #10774
  • 1 cup Whipped Topping
  • 1 cup Water, boiling
  • 3 ounces Lady Fingers
  • Chocolate Shavings, for garnish, optional


  1. Mix together Mascarone, Whipped Topping & 2 tablespoons of the Mocha Cheesecake Blend in a medium sized bowl until completely combined. Set aside.
  2. In a small sauce pan, bring the water to a boil.
  3. Add the remaining 2 tablespoons of the Mousse Blend and whisk until dissolved. Set aside.
  4. Arrange half the lady fingers in bottom of a 5×7-inch casserole dish. Brush or spoon mocha liquid over lady fingers until they are wet, but not soaked all the way through.
  5. Spread half the Mascarpone mixture evenly over the lady fingers in the dish. Arrange the remaining lady fingers on top and brush with Mocha Liquid (there will most likely be some liquid left over).
  6. Cover the lady fingers with the remaining Mascarpone mixture.
  7. Sprinkle with Chocolate Shavings if desired. Chill for 4 hours.
