Recipe: Wildtree Ranch Chicken Chili

Ranch Chicken Chili

Serves 10

Ingredients

  • 2 chicken breasts (about 12 ounces)
  • 1 (15 ounce) can black beans; drained and rinsed
  • 1 (15 ounce) can white beans; drained and rinsed
  • 1 medium onion, finely chopped
  • 1 cup frozen corn
  • 1 (10 ounce) can diced tomatoes with green chilies, un-drained
  • 1 tablespoon Wildtree Chipotle Lime Rub
  • 1 bag Wildtree Creamy Ranch Dressing & Dip Mix
  • 1⁄4 cup cilantro; chopped
  • 1 cup water
  • 1 tablespoon Wildtree Chicken Bouillon Soup Base or Vegetable Soup Base
  • 1 (8 ounce) package Neufchatel cream cheese

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Add the black and white beans.
  3. Add finely chopped medium onion, corn and an un-drained can of diced tomatoes with green chilies.
  4. Top with Chipotle Lime Rub, Ranch Dressing Mix, and chopped cilantro.
  5. Mix together the water and Chicken Bouillon; pour over the
  6. top of the ingredients in the slow cooker.
  7. Finally place your cream cheese in the center. Cover and cook on low for 6 hours.
  8. After it’s been cooking 5 hours, break up the cream cheese into the rest of the mix.
  9. Cover and continue cooking the last hour (if you forget this step, it won’t hurt anything to mix it at the end).
  10. After the 6 hours, remove the chicken breasts into a medium bowl and shred using two forks.
  11. Place the chicken back into the slow cooker and stir to combine everything.
  12. Serve over rice, hot dogs, or with tortilla chips.

Wildtree Italian Chicken Sandwiches

Recipe: Wildtree Italian Chicken Sandwiches

Ingredients

  • 1 ½ pounds chicken breasts, boneless and skinless
  • 2 tablespoons Wildtree Hearty Spaghetti Sauce Blend
  • 2 tablespoons Wildtree Italian Blend
  • 2 tablespoons Wildtree Basil Pesto Grapeseed Oil (my first choice) -or- Wildtree Garlic Grapeseed Oil
  • 6 ounce bag baby spinach
  • 3/4 cup diced roasted red peppers
  • 1/2 cup diced artichoke, optional
  • Shredded Cheese
  • 6 whole wheat buns

Instructions

  1. Combine the chicken, Hearty Spaghetti Blend, Garlic Galore, and Grapeseed Oil in a zip top freezer bag. Remove air from bag and seal.
  2. Use your hands to work the ingredients together and all over the chicken. Freeze.
    To cook:
  3. Completely thaw contents of bag by transferring bag from freezer to refrigerator.
  4. Empty contents of bag into a slow cooker. Cook on high 2-3 hours or until chicken is cooked through and tender.
  5. Transfer chicken to a bowl or other working surface.
  6. Once cool enough to handle, shred the chicken.
  7. Add the spinach, roasted red pepper, artichoke, and chicken to the slow cooker with remaining liquid. Toss to combine.
  8. Cover and continue cooking, stirring often, until spinach is wilted.
  9. Season with salt and pepper before serving
  10. Serve on buns with shredded cheese if desired.

Orange Asian Short Ribs

Ingredients

  • 1½-2 pounds beef short ribs
  • 1 bottle Wildtree Outrageous Orange Sauce, #10785
  • 2 carrots, rough chopped
  • 1 onion, rough chopped
  • 1 head baby bok choy, rough chopped
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Season the ribs and vegetables with salt and pepper
  2. In a crock pot, place the short ribs on top of the vegetables and slather with sauce
  3. Do not stir
  4. Cook for 3 hours on high
